Let Them Eat (Diet) Cake!

Red Velvet Cake MixHungry Girl's email blast this morning was The Great Cake Debate: boxed cake variations involving everything from yogurt to pumpkin to diet soda.  I'm definitely going to try the pumpkin, applesauce and greek yogurt options, but I've been doing the diet soda thing for years and years.

Basically, you take a boxed cake mix you like, mix with 1 unchilled can of your favorite diet soda. Mix, pour into a non-stick pan (hit it with cooking spray first) and then bake at 350° according to the package instructions.  Easy peasy!

While Lisa (Hungry Girl) says the texture is light and fluffy -- and this is true -- it can get a little gummy, depending on the soda or cake mix you choose. I'm not sure why, but I've found that sometimes the top gets a bit tacky/sticky and after a day or so, the whole thing kind of gets dense. So if you plan on making this, I'd suggest serving immediately and, if stored tightly, not keeping it around for more than couple days.  But likely, it'll be polished off before then!

Lisa (Hungry Girl) likes the cream soda/yellow cake mix combo -- and I like that, too, but I think my personal favorite is Devil's Food cake with Diet Cherry Dr. Pepper or Red Velvet cake with Diet Chocolate Fudge Soda by Canfield.

But she brings up a good point -- if you're sensitive to aspartame (I've recently discovered that I am -- and suspect many people are and don't realize it), you might opt for a soda that contains Splenda (sucralose) or Stevia.  I personally loathe Stevia and find it really bitter, but I definitely recommend Hansen's Diet Natural Sodas, sweetened with Splenda.

Here's a run down of some flavor combo ideas I've actually tried:

All of the Hansen's sodas are colorless (except for maybe cola and root beer, I can't recall) so on a lighter cake, they won't interfere with the color of the cake mix.  That's a nice surprise if you decide to do a cherry-flavored white cake or hint of lemon or something. I love Diet Hansen's soda, so I recommend them a lot -- I'm not endorsed by them or anything (though I'd welcome their advertisement *cough cough*). They have a lot of great flavors that I haven't mentioned, like pomegranate, peach, grapefruit and strawberry kiwi, so there are even more possibilities!

Now, frosting? That's another story.  Frosting, especially the kind in a tub, is like paste for your arteries. Tasty, tasty paste.  So as much as I'd love to crack open a can and shove my hand in up to the wrist, I usually go with Light or Fat Free Cool Whip with my soda cakes.  I break open a warm cupcake, put it in a bowl or on a small plate, add a dollop of Cool Whip Free (and maybe some fresh fruit, like berries if I'm so inclined) and go to town. 

According to Hungry Girl's newsletter, all of her cake mix combos, including the diet soda, yogurt and applesauce varieties, are 4 Points® per serving, but I've always found my soda cakes to be 3 Points® or less, depending on the size of the serving and the cake mix used.  I like to make mine into cupcakes (be SURE to lightly spray the liners or they will stick to the paper since there's no oil) for portion control or else I'll just cut a wedge the size of Texas and call it a serving. (I'm not sure how cake with yogurt, pumpkin and applesauce can all have the same amount of Points as cake with zero-calorie diet soda, as they must add calories to the equation, but I'm no food scientist.)

I think if they were really any more than 3 Points®, I would probably just skip the soda cake concept altogether, get a small piece of real cake and call it a day. I can't see spending more than 3 Points® on "diet dessert".  But that's just my opinion. It seems "expensive" for something that just isn't as satisfying. I'd rather have 5 or 6 Points® of awesome and a veggie-packed salad for dinner or run an extra lap than spend 4 Points® on a tiny 'diet' cupcake. (like some of those Smart Ones desserts? 4 Points® for  a 2-bite key lime pie? C'mon!)

But anyway, I am definitely going to try Hungry Girl's pumpkin and yogurt varieties because despite being 4 Points a serving, I could see those being really great for lite entertaining.

I’ve always calculated mine to be 3 pts as well. Vanilla and Orange for me….YUM!

I like the diet soda cakes, but you’re right about them getting a little funky after a while.  In general, I’d rather save up for “real” dessert.  I’ve also tried the pumpkin and I found it to be SUPER dense and oddly textured, though the flavor was really good.  I did applesauce for my daughter’s first birthday cupcakes, and they tasted really good and had the closest texture to “normal” cake.  Applesauce comes in a ton of flavors too, so now I’m inspired to play with flavors! 

My favorite diet cake so far was my birthday cake (http://skinnysushi.com/2010/03/03/recipe-extravaganza/) which I made with pudding and cake mix… though it also got weird texture-wise after a few days… it’s possible that was from the weirdo icing I made.  Don’t make that icing.

I’ve been told by several people that 1 (20 oz) can crushed pineapple (with juice) + 1 angel food box cake mix makes an awesome cake. I haven’t tried it myself because half the fun for me is baking from scratch, but it does *sound* good!

Boxed cake mix mixed with diet soda? How gross. Just try eating more fruits and veggies and less processed/boxed/frozen crap. Drink water instead of diet soda, etc.  This stuff is fit for a garbage can not a human body. If you just make some simple, healthful dietary changes you will lose weight. Start walking a couple of miles a day. The weight will literally melt off and *stay* off if you just stop eating all this crap and get your body moving regularly. Think natural not boxed/frozen crap.

Hey Joelle,
How did you come to realize you were sensitive to aspartame?  I was just wondering.
I gave up pop about 9 months ago, it was the worst withdrawal a non-smoker/non-drug user could go through - I am convinced it wasn’t JUST caffeine withdrawal but also aspartame withdrawal..It makes me whimper to think of all the diet pepsi I’ve drunk over the years if the withdrawal was that bad.  I’m not sure quitting pop has made any difference besides gaining a little weight from losing the caffeine boost to my metabolism :(

I’m vegan, and even I can’t stand when people preach the “natural and healthy” gospel…as if no one wants a bite of frickin’ cake every now and again.  I’ve never met someone who, on their birthday, was like, “Ya know what?  Boxed cake and diet coke are crap.  I want me a nice birthday carrot!”

I’ll second the pumpkin—omg, it’s awesome.  I use it with Fiber 1 banana nut muffin mix and it’s around 2-3 points per muffin, depending on how big/small I make them.  They’re super dense, but the taste is fantastic.  My son loves them, too.  (Also, it keeps the mail moving all regular-like, if you’re picking up what I’m puttin’ down.  Although, I have coworkers who won’t touch Fiber 1—they’re hypersensitive to it or something—so, it’s express mail as opposed to first class as it should be.)

HAHAHA.  Dude, I’ve read that twice and “priority sent by hot air balloon” is just never going to not crack me up. I’m still giggling at my desk.

ooo…also, there was a pumpkin shortage last year (and into this year), so getting canned pumpkin was seriously tricky.  Walmart/Kroger here in town don’t have any, and I found some at the local Mom and Pop—10 cans, so I just cleaned them out.  *hoards*

I wish I could!  I could NOT find pumpkin earlier this year at all.  They kept telling me that canned pumpkin was “seasonal”, which I knew was utter bullshit—so, I googled it: http://blogs.wsj.com/economics/2009/11/19/libbys-pumpkin-shortage-stymies-thanksgiving-tradition/

I’m not sure what the sitch is on it now, because I totally loaded up and haven’t had to search for it lately.

Ah, the great pumpkin shortage of ‘09.  It still tears me up just thinking about it.  Alas, I have checked every store shelf from Ohio to PA and not found a single can.  My entire family is searching for me . . .

Maybe Laurie could grow us some.

Glad I could give you an afternoon chuckle -n- fizz!  For the record, I tried the Greek Yogurt option with a White Cake Mix.  It was actually pretty good.  VERY moist and brownie-like, which leads me to believe that the Devil’s Food combo suggested by Hungry Girl will ROCK!  However, I’m apt to use Vanilla as opposed to the Plain that I used last time, because I could taste it in there.  Gotta say, too, that my kids LOVED the cupcakes I made the other day with French Vanilla Cake Mix and Diet Cream Soda!  They tasted like sugar cookies . . . need I say more?  No frosting required!  For the record, I hope you’re all as addicted to Double Chocolate Vitatops.  If not, let the chocolate celebration begin!!!!!
